Preparation
Cook the jasmine rice according to package instructions in salted water. First slice the beef sirloin and then cut it into very fine strips. Since the meat is only briefly fried, the strips must be really thin.
For the sauce, whisk soy sauce, fish sauce, and cornstarch with approx. 200 ml of water until smooth. Cut the red onion and bell pepper into fine strips. Slice the black garlic thinly. Deseed the chili pepper and chop finely.
In the Pan
Heat a pan or wok with a little oil until very hot. Sear the beef strips on both sides (only a few minutes), remove from the pan, and set aside.
Chef's tip
Black garlic is fermented and tastes sweet and mild, almost like balsamic onions. It is the secret to the special umami flavor of this dish!
