Preparation method

Preparation

1

Preheat the oven to 200 °C top/bottom heat. Pat the beef schnitzels dry and lightly score any connective tissue along the edges so the meat does not curl during cooking. Season the meat evenly with fine salt and freshly ground black pepper, and spread thinly with mustard on one side.

2

Peel and finely dice the onion and garlic cloves. Lightly dredge the schnitzels in smooth flour on the side spread with mustard and carefully tap off any excess flour.

Searing & Braising

3

Heat the clarified butter in a large pan. Sear the beef schnitzels floured-side down over high heat for 2 minutes, turn over, and brown briefly on the other side for about 1 minute. Remove the meat and let it rest briefly.

Chef's tip

For an especially intense aroma, use a tangy Tyrolean mountain cheese aged for at least 6 to 10 months – it melts creaminess and adds a fine nutty note.

Make sure to braise the meat until truly tender before gratinating: only when the beef schnitzels are melt-in-the-mouth tender should they be placed in the oven for the brief gratinating time.
