    Lightly toast the rye bread slices as desired. Cut the gherkins into long, thin slices.

Assembly

    Spread four slices of bread with cream cheese, and the other four with mustard.

    Generously layer the pastrami (ideally at room temperature or briefly warmed) onto the cream cheese sides. In New York, it's perfectly fine for it to be a small mountain!

    Place the cucumber slices on the meat and cover with the mustard-spread bread slices. Halve diagonally and serve.
