Preparation
- 1Lightly toast the rye bread slices as desired. Cut the gherkins into long, thin slices.
Assembly
- 1Spread four slices of bread with cream cheese, and the other four with mustard.
- 2Generously layer the pastrami (ideally at room temperature or briefly warmed) onto the cream cheese sides. In New York, it's perfectly fine for it to be a small mountain!
- 3Place the cucumber slices on the meat and cover with the mustard-spread bread slices. Halve diagonally and serve.
