Place the beef ribs in a large pot with water. Add bay leaves, allspice, whole peppercorns, and a pinch of salt. Cook the meat over medium heat until tender (approx. 90-120 minutes, depending on thickness), until it almost falls off the bone. Then remove from the broth and let cool.
For the BBQ sauce, whisk all ingredients (ketchup, white wine vinegar, brown sugar, honey, vegetable oil, Worcestershire sauce, mustard, smoked paprika powder, and ground pepper) until smooth in a bowl.
Generously coat the cooled ribs with the BBQ sauce. Ideally, let them marinate covered in the refrigerator until the next day, so the flavors can penetrate deeply.
