Preparation of the Madeira Sauce

Finely chop shallots and mushrooms.

In a small pot, melt 20 g of butter over medium heat. Sauté the shallots until translucent, then add the mushrooms and roast for approx. 2 minutes.

Deglaze with Madeira and demi-glace. Bring to a boil, reduce heat, and let the liquid reduce to about one-third. Remove from heat.
