Straccetti di Manzo sind ein römischer Klassiker der schnellen italienischen Küche: Zarte Rindfleischstreifen werden blitzschnell scharf angebraten, mit süßen Kirschparadeisern und feinem Aceto Balsamico geschwenkt und auf frischem Rucola mit gehobeltem Parmesan serviert. In nur 20 Minuten fertig!

Cut the beef tenderloin into thin strips (approx. 1 cm wide). Wash and halve the cherry tomatoes. Peel and finely slice the garlic. Wash the arugula thoroughly and spin dry.
Instructions
Heat 2 tbsp of olive oil in a large pan. Sear the beef strips in batches over high heat for just 1 to 2 minutes so they remain juicy and tender. Season the meat with salt and pepper and immediately transfer from the pan onto a plate.
Add the remaining olive oil to the same pan and fry the garlic together with the halved cherry tomatoes over medium heat for 2 to 3 minutes until the tomatoes burst slightly. Deglaze with the balsamic vinegar and scrape up the browned bits from the bottom of the pan.
Chef's tip
Sear over high heat: Straccetti ('shreds') must be seared very quickly and over high heat. Sear the meat in batches so no liquid escapes and the strips stay wonderfully juicy.
This goes wonderfully with fresh, crusty ciabatta or baguette to soak up the flavorful balsamic pan juices.
