Preheat the oven to 220 °C top/bottom heat. Cut the beef fillet into thin, bite-sized strips. Finely chop the garlic and mix with the meat in a bowl together with 1 tbsp sunflower oil, cumin, a squeeze of lime juice, and a pinch each of salt and pepper. Leave to marinate for approx. 15 minutes.

Spread the French fries evenly on a baking sheet lined with baking paper and bake in the preheated oven for 20–25 minutes until golden brown and crispy.

Preparing Fresh Toppings

For the pico de gallo, wash, deseed, and finely dice the tomatoes. Finely chop the red onion. Roughly chop the fresh coriander. Combine everything in a small bowl and season to taste with a little lime juice, salt, and pepper.

Chef's tip

For fiery heat, garnish with a few pickled jalapeño slices to taste.

The pan for the meat should be smoking hot so that the beef fillet browns immediately and stays wonderfully tender.
