Preparation method
Preparation & cooking the cauliflower
Bring a large pot of generously salted water to a boil. Cut the cauliflower into small florets, wash, and blanch in the boiling water for about 5 minutes until tender-crisp. Remove the cauliflower florets with a slotted spoon and set aside. Leave the cooking water on the stove for the pasta.
Soak the raisins in a small bowl with a little warm water. Dissolve the saffron in 2 tbsp of hot pasta water. Peel and finely chop the onion and garlic. Wash and finely chop the fresh parsley.
Toasting crispy breadcrumbs & preparing the sauce
Heat 1 tbsp of olive oil in a pan. Toast the breadcrumbs and pine nuts in it over medium heat, stirring constantly, until golden brown and crispy. Remove from the pan and allow to cool.
Chef's tip
Tip: For an even creamier consistency, lightly mash some of the cooked cauliflower florets with a fork – this helps the vegetables combine perfectly with the pasta.
Culinary tradition: Crisp toasted breadcrumbs are traditionally valued in Sicily as 'poor man's cheese' (muddica atturrata) and give the dish a wonderfully nutty crunch.
