Dough ingredients

  • 150 g fine cornmeal
  • 150 g plain wheat flour
  • 250 ml buttermilk
  • 100 g grated cheddar
  • 50 g jalapeños (pickled)
  • 2 tbsp maple syrup

Prepare the dough

    Preheat the oven to 180 °C. In a bowl, mix cornmeal, wheat flour, baking powder, and a pinch of salt.

    In a second bowl, whisk buttermilk, eggs, melted butter, and maple syrup. Add the wet ingredients to the dry ingredients and stir briefly.

    Fold in the grated cheddar and finely chopped jalapeños.

Baking

    Pour the dough into a greased baking dish (approx. 20x20 cm). Optionally, top with more jalapeño rings.

    Bake in the oven for approx. 20-25 minutes until golden brown and a toothpick comes out clean. Let cool briefly before slicing.
