Ingredients

  • 260 g Carrots
  • 100 g Yellow onion
  • 45 g Smoked tofu
  • 50 g Golden millet
  • 37 g Corn flour & cornstarch (mixture)
  • 23 g Soy sauce
  • 1 tbsp Nutritional yeast flakes
  • ¾ tsp Ground rosemary
  • 1 pinch Ground ginger
  • ½ tsp Dried lovage
  • ¾ tsp Dried thyme
  • ½ tsp Ground coriander
  • ½ tsp Ground turmeric
  • 1 tsp Onion powder
  • 1 pinch Ground nutmeg
  • ½ tsp Smoked paprika powder
  • ¼ tsp Garlic powder
  • ¼ tsp Ground pepper
  • 2 pinches Table salt
  • 80 ml Still water

Preparation

    Rinse the millet four times with hot water to remove any bitterness. Then cook it in double the amount of water over low heat until soft.

    Meanwhile, finely grate the carrots and finely dice the onion. Lightly salt both and sauté them one after another in a pan until translucent.

    Combine the cooked millet with the sautéed carrots and onions. Crumble the smoked tofu finely into the mixture. Add all the spices, nutritional yeast flakes, and the mixture of cornstarch and corn flour, then process everything into a homogeneous mass.

    Form small patties from the mixture and place them on a baking sheet lined with parchment paper. Drizzle with a little oil and bake in a preheated oven at 190 °C convection for approx. 25 minutes until golden brown.
