Clean the mushrooms and slice them. Sauté until golden brown in a hot wok or large pan with a little vegetable oil.

Meanwhile, cook the Udon noodles according to package instructions (approx. 3 minutes) in boiling water, drain, and briefly rinse. Tip: Use plenty of unsalted water for the best result.

Finely chop the garlic and ginger. Add them to the mushrooms in the pan. Add the brown sugar and two tablespoons of soy sauce. Cut the spring onions into coarse pieces, add them as well, and sauté everything together for another minute.

Chef's tip

For an extra crispy touch, you can sprinkle some toasted sesame seeds over the noodles at the end.
