Preparation method
Grate the cheddar coarsely. Finely dice the red onion. Wash, clean, and divide the broccoli into small florets.
Press the garlic and sauté it with the diced onions in a large pot with one tablespoon of olive oil until translucent. Deglaze with vegetable broth, whipping cream, and lemon juice.
Add the broccoli florets and uncooked penne to the pot. Stir everything well and simmer over medium heat, stirring occasionally, for about 10–15 minutes until the pasta is al dente. If the sauce becomes too thick, add a splash of milk.
Chef's tip
For an extra crispy touch, you can sprinkle the pasta with some toasted pine nuts before serving.
