Finely dice the celery. Halve the avocados, remove the pit, and scoop out the flesh with a spoon. Then cut into approximately 0.5 cm cubes.

Halve the hard-boiled eggs. Place the yolks in a bowl and mash them smoothly with a fork, along with the Dijon mustard and lemon juice. Add the mayonnaise and mix well.

Finely chop the egg whites and fold them into the yolk mixture.

Chef's tip

For a creamier texture, you can also roughly mash the avocado with a fork instead of dicing it. If you like it a bit spicier, add a few drops of Tabasco to the spread.
