Preparation method

Preparation

1

Pat the beef dry and cut into approx. 3 cm cubes. Finely chop the onions and garlic cloves. Peel the carrots, celeriac and potatoes and cut into bite-sized pieces. Briefly toast the poppy seeds in a dry pan to release their aroma, then set aside.

Searing & braising

1

Heat the clarified butter in a heavy stew pot. Sear the beef in batches on all sides over high heat, then remove and set aside.

2

Sauté the chopped onions in the drippings over medium heat until golden brown. Stir in the garlic and tomato paste and cook for 1 minute. Add the caraway seeds, marjoram and bay leaves.

Chef's tip

A heavy cast-iron pot with a tight-fitting lid is particularly well-suited for cooking in the oven. At 160 °C top/bottom heat, the meat braises especially evenly and remains wonderfully juicy.

The poppy seeds can be used either whole or freshly crushed. Whole seeds provide a delicate nutty bite, while freshly crushed seeds thicken the sauce to an even creamier texture.
