Batter Ingredients
- 150 g fine cornmeal
- 150 g plain wheat flour
- 250 ml buttermilk
- 100 g grated Cheddar
- 50 g jalapeños (pickled)
- 2 tbsp maple syrup
- 2 eggs
- 50 g unsalted butter
- 1 pkg. baking powder
- 1 pinch salt
Prepare the Batter
- 1Preheat the oven to 180 °C. In a bowl, mix cornmeal, wheat flour, baking powder, and a pinch of salt.
- 2In a second bowl, whisk together buttermilk, eggs, melted butter, and maple syrup. Add the wet ingredients to the dry ingredients and stir briefly.
- 3Fold in the grated Cheddar and finely chopped jalapeños.
Baking
- 1Pour the batter into a greased baking dish (approx. 20x20 cm). Optionally top with additional jalapeño rings.
- 2Bake in the oven for approx. 20-25 minutes until golden brown and a toothpick inserted comes out clean. Let cool briefly before slicing.
