Ingredients
- 100 g Smoked tofu
- 1 tsp Rapeseed oil
- 20 g Natural cream cheese
- 1 pinch Ground turmeric
- 1 pinch Garlic powder
- 1 pinch Ground cumin
- 1 pinch Fine salt
- 1 pinch Ground black pepper
- 80 g Whole wheat toast bread
- 160 g Carrots
- 1 handful Fresh herbs
- 1 splash Whole milk
Preparation
- 1Finely mash the smoked tofu with a fork and mix well in a bowl with turmeric, garlic powder, ground cumin, salt, and pepper.
- 2Heat one teaspoon of rapeseed oil in a pan. Sauté the tofu-spice mixture in it for a few minutes over medium heat until it lightly browns.
- 3Add the cream cheese and a splash of milk (or water). Stir everything well until a creamy consistency is achieved. Add a little more liquid depending on the desired moisture.
- 4Meanwhile, toast the whole wheat toast bread until crispy in a toaster or a fat-free pan. Wash, peel, and cut the carrots into sticks.
- 5Arrange the creamy tofu scramble on the toasted bread slices, sprinkle with plenty of fresh herbs, and serve together with the carrot sticks.
Tip
For a vegan version, simply replace the cream cheese and milk with plant-based alternatives such as soy cream cheese and oat milk.
A touch of Kala Namak (black salt) gives the tofu a deceptively authentic egg flavor.
