Preparation method
Preheat the oven to 180 degrees Celsius (top/bottom heat). Clean the turkey meat and cut it into 8 smaller pieces. Brush with olive oil, season with grill seasoning, and lightly salt. Sear in a pan until the meat is browned.
Firmly wrap each piece of meat in a slice of prosciutto. Place the parcels in an ovenproof dish lined with baking paper, cover with aluminum foil, and cook in the oven for 25 minutes.
Meanwhile, peel the yellow carrots and cut them into long strips. Sauté slowly in a pan with butter for about 10 minutes until al dente. Sprinkle with brown cane sugar and let caramelize briefly.
Chef's tip
For an extra fine touch, you can deglaze the carrots with a splash of white wine before adding the sugar.
