Ingredients for the Pancakes
  • 240 g fine oats
  • 3 ripe bananas
  • 6 free-range eggs M
  • 30 g unsalted butter
Ingredients for Serving
  • 1 tbsp vegetable oil for greasing the pan
  • 150 g fresh berries (raspberries, blueberries)
  • 150 g natural yogurt 3.5% fat
  • 30 ml organic maple syrup
  • 1 tbsp powdered sugar for sprinkling
  • 1 handful fresh mint for decoration

Mash the bananas finely in a bowl with a fork. Add the oats, eggs, and soft butter and mix everything into a smooth batter.

Grease a pan with a little vegetable oil. Place one tablespoon of batter at a time into the pan and form pancakes with a diameter of approx. 8–10 cm. Fry over medium heat until golden brown on both sides.

Serve the pancakes warm with fresh berries and a dollop of natural yogurt. Drizzle with maple syrup, lightly sprinkle with powdered sugar, and garnish with fresh mint leaves.

Chef's tip

For a particularly fine texture, you can briefly grind the oats in a blender beforehand.
