Preparation method

Preparation & Searing

0

Pat the beef dry and cut into approx. 3 cm cubes. Peel and finely chop the onions and garlic. Peel the carrots and cut into bite-sized slices or batons.

1

Heat the clarified butter in a heavy Dutch oven or roasting pan. Sear the beef in batches all over over high heat until nicely browned. Then remove and set aside.

Braising & Cooking the Millet

0

Slowly sauté the chopped onions in the drippings over medium heat until golden brown. Briefly sauté the garlic, ground caraway, and rubbed marjoram until wonderfully fragrant.

Chef's tip

Rinsing millet with hot water: Always rinse millet in a sieve with hot water before cooking – this removes natural bitter substances and ensures a delicate, nutty flavor.

Storage & infusing: Like many traditional Austrian stews, the millet and beef stew tastes almost even more aromatic when reheated the next day. If the millet thickens upon standing, simply thin it with a little stock.
