Ingredients
- 600 g sirloin steak (4 pieces à 150 g)
- 390 g yellow onions (cut into fine rings)
- 800 g waxy potatoes
- 4 cloves garlic
- 4 eggs (size M)
Pantry
- 100 ml vegetable oil for deep-frying and frying
- 1 pinch salt
- 1 pinch freshly ground black pepper
Preparation & Potatoes
- 1Heat the vegetable oil in a large pot to approx. 180 °C. Preheat the oven to 90 °C to keep the finished components warm later.
- 2Peel the potatoes, cut them into wedges or thick fries, and deep-fry them in the hot oil until golden brown and crispy. Drain on a baking sheet lined with kitchen paper, season with salt, and keep warm in the oven.
Onions & Meat
- 1Carefully pour off the excess oil, leaving only about 3 tablespoons in the pan (or use a new pan). Roast the onion rings in it over medium heat for about 10 minutes until soft and golden brown. Remove the onions and also keep them warm in the oven.
- 2Finely chop the garlic. Salt and pepper the steaks on one side and sprinkle with half of the garlic. Lightly flatten with a meat tenderizer, then turn and repeat the process on the other side.
- 3Heat the pan strongly and sear the steaks on both sides until they have reached the desired doneness. Place the steaks on the bed of onions and let them rest briefly in the oven.
Serving
- 1Fry the fried eggs in the same pan with a little fresh oil. Season with salt and pepper to taste.
- 2Arrange the potatoes, steak with onions, and fried egg on plates and serve immediately. Enjoy your meal!
Tip
For particularly crispy potatoes, you can soak them briefly in cold water after cutting and then pat them thoroughly dry before they go into the hot oil.
