Ingredients
- 650 g skinless chicken breast
- 2 tbsp light Miso paste
- 100 g corn breadcrumbs
- 1 tsp curry powder
- ½ tsp ground coriander
- 1 handful fresh coriander
- 20 g black sesame
- 2 tbsp soy sauce
- 1 clove fresh garlic
- 1 tbsp olive oil
- 1 pinch ground pepper
Preparation & Breading
- 1Preheat the oven to 185–190 °C top/bottom heat. Line a baking sheet (approx. 30 cm × 40 cm) with baking paper.
- 2Wash the chicken breasts, pat them dry, and halve them lengthwise. Season the meat with freshly ground pepper. Salt can be omitted, as the miso paste and soy sauce already provide sufficient seasoning.
- 3Prepare two bowls: In the first bowl, mix the corn breadcrumbs with the curry powder, ground coriander, finely chopped fresh coriander, and black sesame. In the second bowl, stir the miso paste with the soy sauce, pressed garlic, olive oil, and a little pepper to form a smooth marinade.
- 4First, generously coat the chicken pieces all around with the miso marinade, then turn them in the corn breadcrumb mixture, lightly pressing the breading.
Baking & Serving
- 1Place the breaded schnitzels on the prepared baking sheet and bake in the preheated oven at 185–190 °C for approx. 25–28 minutes until golden brown and crispy.
- 2Remove the finished schnitzels from the oven and serve immediately. A crisp green salad or Asian stir-fried vegetables pair excellently with them.
- 3Tip: If you like it spicy, you can add a pinch of chili flakes to the breadcrumb mixture.
Tip
For an extra crispy breading, use coarse corn breadcrumbs or mix in some panko.
