Soak the glass noodles in lukewarm water for about 5–7 minutes until pliable. Then drain and snip them once or twice with kitchen shears so they are easy to serve later.
For the aromatic braising sauce, thoroughly mix the soy sauce, oyster sauce, sesame oil, cane sugar, and vegetable broth in a bowl until the sugar is completely dissolved.
Crush and coarsely chop the garlic, and slice the ginger thinly. Finely chop the coriander stems (reserve the delicate leaves for garnish). Coarsely crush the peppercorns in a mortar. Wash the spring onions and cut them into approx. 3 cm pieces.
Chef's tip
Traditionally Goong Ob Woonsen is served in a Thai clay pot, but a cast-iron Dutch oven or a wok with a lid works just as perfectly.
If you like it spicier, you can serve a small bowl of Thai 'Nam Jim Seafood' sauce with fresh lime juice, garlic, and chillies on the side.
