For the salsa, peel the mango, cut the flesh away from the stone and dice finely. Chop the coriander and mix with the juice of one lime and a pinch of salt.

Cut the cod fillet into strips, season with salt and pepper, and fry in a pan with a little oil on both sides until crispy.

Cut the red cabbage into fine strips. Briefly warm the wheat tortillas in a dry pan or in the oven.
