Ingredients
- 180 g Soba noodles
- 2 shallots
- 1 piece ginger
- 2 cloves garlic
- 1 chili pepper
- 2 tbsp vegetable oil
- 2 tbsp sesame oil
- 150 g natural tofu
- 1 carrot
- 150 g broccoli
- 1 handful mung bean sprouts
- 1 spring onion
- 1 pinch ground black pepper
Sauce
- 6 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tsp brown cane sugar
Garnish
- 1 tbsp peeled sesame seeds
Preparation
- 1Cook the soba noodles according to package instructions (approx. 2-3 minutes) in boiling water, then drain and rinse with cold water.
- 2Heat the vegetable oil together with the sesame oil in a wok or large pan.
- 3Add the finely chopped shallots, grated ginger, pressed garlic, and finely sliced chili pepper and sauté briefly until fragrant.
- 4Add the broccoli cut into small florets, pour in half of the prepared sauce (mix soy sauce, lime juice, fish sauce, and sugar), and cook for approx. 2 minutes.
- 5Add the diced tofu, cooked soba noodles, carrot cut into fine strips, and the remaining sauce. Mix everything well and heat briefly.
- 6Finally, fold in the spring onion cut into rings and the mung bean sprouts.
- 7Mix everything well again, season with pepper, and sprinkle generously with sesame seeds before serving.
