Roast the pumpkin seeds in a pan over medium heat without fat, stirring constantly, until golden brown. Then transfer to a bowl and let cool.

Preheat the oven to 180 °C top/bottom heat.

Peel and deseed the butternut squash and cut into approx. 2 cm cubes. In a bowl, mix with 2 tbsp olive oil, salt, and freshly ground pepper. Spread the pumpkin cubes in a single layer on a baking sheet and roast in the oven for approx. 30 minutes until soft. Remove and let cool completely.
Chef's tip
For a particularly fine consistency, it is best to use an immersion blender to puree the pumpkin.
