Preheat the oven to 200 °C top/bottom heat. Peel the potatoes and cut them into approx. 3 mm thin slices. Arrange the potato slices in a baking dish or on a baking sheet lined with baking paper, mix with a little salt, pepper, and 1 tbsp olive oil, and precook in the oven for about 15 minutes.

Meanwhile, thoroughly rinse the sea bream under cold water, pat dry with paper towels, and score the skin diagonally 2 to 3 times on both sides. Season the fish inside and out with salt and pepper.

Cooking in the oven

Place the prepared sea bream directly on top of the precooked bed of potatoes in the oven. Reduce the heat to 180 °C and bake the fish for about 18 to 20 minutes until juicy and the fish meat easily flakes away from the bones.

Chef's tip

Traditional treat: In San Sebastián, the juices released from the fish into the pan are briefly swirled again with the hot refrito in the pan to create a wonderfully creamy emulsion.

Side dish tip: Serve with a fresh green leaf salad and a glass of chilled Spanish white wine (e.g. Txakoli or Albariño).
