- 350 g frozen peas
- 1 large yellow onion
- 2 garlic cloves
- 1 tbsp lemon juice
- 700 ml vegetable broth
- 1 tbsp rapeseed oil
- 1 pinch salt
First, finely chop the onion and garlic. In a medium-sized pot, heat the rapeseed oil over medium heat and sauté the onion until translucent for about 4 minutes. Add the garlic and roast for another minute.
Add the frozen peas to the pot and pour in the vegetable broth. Bring everything to a boil and simmer over medium heat for about 15 minutes.
Finally, finely blend the soup with an immersion blender. Season with salt and fresh lemon juice and serve hot. A dollop of cream or a few croutons go perfectly with it.
Chef's tip
For an extra fine texture, you can strain the soup through a sieve after blending.
Serve the soup with toasted black bread croutons for extra crunch.
