First, score the tomatoes crosswise, place them in a bowl, and pour boiling water over them. Wait about 5 minutes, then the skin can be easily peeled off.

Quarter the peeled tomatoes and remove the seeds. Place the pulp in a food processor and blend into a coarse purée.

Peel and finely chop the shallots and garlic.
Chef's tip
For a particularly intense aroma, you can roast the tomatoes in the oven before blending. Serve the soup with an extra drizzle of olive oil.
