Soak the chickpeas in plenty of cold water for at least 4 hours (preferably overnight). Then drain and let them drip dry in a sieve.

Finely chop the onions and garlic. Cut the celery stalks and carrots into cubes of approx. 0.5 cm. Cut the Napa cabbage crosswise into strips of approx. 0.5 cm width.

Heat the olive oil in a large pot over medium heat. Sauté the onions and garlic until translucent. Add the chickpeas and roast for approx. 30 seconds.
Chef's tip
For an even richer flavor, you can use chicken broth instead of vegetable broth.
If you like it even greener, you can replace the Napa cabbage with kale or black kale.
