  • 800 ml chicken broth
  • 350 g yellow onions
  • 100 g breakfast bacon
  • 20 g lard
  • 80 g Edam cheese
  • 1 pinch table salt
  • 1 pinch ground black pepper

Peel the onions, cut them into fine rings, and sauté them in hot lard until golden brown. Add the finely chopped bacon and fry briefly until slightly crispy.

Transfer the mixture to a pot (or continue directly in the pot) and pour in the chicken broth. Let the soup simmer for about 20 minutes over medium heat.

Season the soup with salt and pepper. Remove from heat and stir in the grated cheese until slightly melted. Serve immediately while hot.

Chef's tip

For a particularly intense aroma, you can caramelize the onions very slowly. If you don't mind carbs, serve with a slice of toasted dark bread.
