Peel the onion and dice finely. Clean and peel the carrots, then cut them into slices just under half a centimeter thick.

Melt the butter in a pot, add the onion, and sauté over medium heat, stirring occasionally, for about two to three minutes until soft but not browned.

Add the carrots, sprinkle with sugar, slightly increase the heat, and continue stirring for about five minutes until the carrots soften slightly. Pour in the boiling broth and cold whipping cream, bring to a boil, and simmer over low heat for 10-15 minutes until the carrots are completely soft.
Chef's tip
For a particularly intense aroma, you can lightly caramelize the carrots together with the sugar before adding the broth.
