Prepare Dashi Broth

Place the dried shiitake mushrooms and a piece of nori seaweed in 1.2 liters of water. Ideally, let them steep overnight in the refrigerator. Alternatively, soak them for about three hours in hot (not boiling) water.

Season the broth with miso paste and soy sauce and gently heat.
Prepare Ramen Toppings

Remove the soaked shiitake mushrooms from the broth, cut them into strips, and let them simmer in the broth for another 30 minutes.
Chef's tip
For an even more intense broth, you can also soak a small piece of kombu seaweed. Make sure not to boil the miso paste to preserve its full aroma and healthy ingredients.
