Soak the Pho rice noodles in lukewarm water for about half an hour, then drain and let them drip well. Cut the beef roast into very fine strips. For the sauce, mix all the specified ingredients (tamarind paste, cane sugar, fish sauce, and oyster sauce) well in a small bowl.
Wok Cooking
Heat the vegetable oil strongly in a wok or large pan. Add the finely chopped garlic, shallots, and chili pepper. Sauté briefly until the mixture smells wonderful. Then crack the eggs directly into the wok and let them set briefly while stirring.
After about a minute, add the beef strips and sear them. Add the soaked rice noodles and the prepared vegetables (carrot sticks, mung bean sprouts, and spring onion rings). Pour the prepared sauce over everything. Continue to stir-fry for about 3 to 4 minutes until the noodles have reached the desired tenderness.
Chef's tip
For a particularly intense aroma, you can briefly toast the peanuts in a dry pan before crushing them. If you prefer it less spicy, remove the seeds from the chili pepper before chopping.
