Method
- 1Thoroughly wash the vegetable scraps. Halve the onion.
- 2Place vegetables, spices, and herbs into a pot and cover with cold water.
- 3Add salt, bring to a boil, then reduce heat to a minimum.
- 4Simmer gently for at least 60–90 minutes, ideally longer for maximum flavor.
- 5Strain the finished broth through a fine sieve.
