  • 200 g beef steak (e.g., sirloin or fillet)
  • 1 tbsp olive oil
  • 50 ml Whiskey
  • 50 ml whipping cream
  • 50 g cold butter
  • 1 tbsp green peppercorns (pickled)
  • Salt
  • Black pepper (freshly ground)

Preparation

    Season the beef steak generously with salt and freshly ground black pepper.

    Heat olive oil strongly in a pan and sear the steak on both sides to the desired doneness. Remove the meat from the pan and let it rest.

    Deglaze the pan drippings with whiskey and let the alcohol evaporate completely. Turn off the hob. Stir in the whipping cream and green peppercorns. As a final touch, stir in the cold butter cubes until the sauce has a creamy consistency.

    Season the sauce to taste and serve with the steak and side dishes (e.g., roasted potatoes and asparagus). Enjoy your meal!
Tip
For the perfect consistency of the sauce, it is important that the butter is really ice-cold and is only stirred in at the very end with the hob turned off (to emulsify).
