Ingredients

  • 500ml chicken or turkey broth
  • 150 g rice noodles
  • 200g turkey breast, very thinly sliced
  • A thumb-sized piece of ginger, sliced
  • ½ cinnamon stick
  • 1 tbsp fish sauce
  • 1 star anise
  • 1 clove
  • 50g mung bean sprouts

Preparation

    Slice ginger into thin pieces. Simmer the broth gently with ginger, star anise, clove, and cinnamon for 30 minutes. Strain out the spices.

    Add fish sauce and keep the broth hot.

    Cook rice noodles separately according to package instructions, rinse briefly, and drain.

    Place raw turkey meat in serving bowls.

    Pour the boiling hot broth over it to gently cook the meat.

    Add rice noodles and top with mung bean sprouts, basil, mint, and cilantro.

    Serve immediately with lime wedges on the side.
