Preparation & Marinating
Cut the pork neck into cubes of approx. 3–4 cm. Peel and finely chop the garlic. Place the meat in a bowl, mix with the ground coriander, garlic, salt, pepper, and the cinnamon stick, and pour over the dry red wine. Cover and let marinate for at least 30 minutes (or overnight in the refrigerator).
Searing & Braising in the Oven
Preheat the oven to 160 °C top/bottom heat. Lift the meat out of the marinade and drain well; make sure to catch and set aside the marinade along with the wine, spices, and cinnamon stick.
Heat the olive oil in an ovenproof braising pot. Sear the meat cubes in batches over high heat for about 5–6 minutes until well browned on all sides.
Chef's tip
Afelia develops its distinctive flavor through the interplay of velvety red wine and coriander. Letting the meat marinate overnight in the red wine broth makes it especially tender and aromatic.
For an even more intense and thicker sauce, the lid can be removed during the last 10 minutes of braising in the oven.
