Ingredients
- 500 g pork belly
- 1 tbsp sugar
- 2 tbsp fish sauce
- 1 tsp salt
- 1 pinch black pepper
- 1 spring onion for garnish
- 250 g jasmine rice
Method
- 1Heat the sugar with a splash of water in a pan over medium heat until it caramelizes to a golden brown. Then add the diced pork belly, fish sauce, salt, and pepper. Mix everything well and let it marinate for 30 minutes.
- 2Sear the meat for about 8 minutes until it takes on a dark color. Then pour in enough water to completely cover the meat. Simmer over low heat for about 1 hour until almost all the liquid has evaporated and a thick sauce forms.
- 3Cook the jasmine rice according to package instructions. Serve the caramelized pork belly with the rice and garnish with finely chopped spring onions.
