Ingredients

  • 500 g pork belly
  • 1 tbsp sugar
  • 2 tbsp fish sauce
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 spring onion for garnish
  • 250 g jasmine rice

Method

    Heat the sugar with a splash of water in a pan over medium heat until it caramelizes to a golden brown. Then add the diced pork belly, fish sauce, salt, and pepper. Mix everything well and let it marinate for 30 minutes.

    Sear the meat for about 8 minutes until it takes on a dark color. Then pour in enough water to completely cover the meat. Simmer over low heat for about 1 hour until almost all the liquid has evaporated and a thick sauce forms.

    Cook the jasmine rice according to package instructions. Serve the caramelized pork belly with the rice and garnish with finely chopped spring onions.
