Preparation method

Preheat the oven to 180 °C top/bottom heat.

Soak the dried mushrooms in 200 ml warm water. Pluck a rosemary sprig and roughly chop the needles.

Wash the potatoes thoroughly, dry them, and quarter them lengthwise (halve small potatoes only). Peel the carrots and cut them into sticks about 5 cm long.

Chef's tip

For this recipe, be sure to use an oven-safe roasting pan with a matching lid. A heavy cast-iron roasting pan distributes heat particularly evenly.
