Heat the olive oil in a large pot over medium heat. Add the finely chopped onions and sauté until translucent for approx. 5–6 minutes.

Meanwhile, wash the pork leg, pat it dry, and cut it into approx. 2 cm cubes.

Once the onions are soft, add the meat to the pot and sear for another 5–6 minutes.
Chef's tip
For a quicker version, you can use pork tenderloin – in this case, the braising time is reduced to about 20 minutes.
