Preheat the oven to 160 °C. Lightly score the fat edge of the pork chops several times to prevent them from curling during frying. Season generously with salt and pepper on both sides.

Heat a deep pan, melt the butter in it, and sauté the shallot rings until translucent for a few minutes. Add the chops and the crushed garlic cloves and fry them over medium heat for about 7 minutes on each side until golden brown.

Place the chops in a baking dish, sprinkle with sage leaves, and pour the pan juices over them. Keep warm in the oven.
