Preheat the oven to 175 °C top/bottom heat. Cut the pork collar into approx. 3-4 cm cubes, pat dry, and season generously with 1 tsp fine salt and 1 tsp ground black pepper.

Peel the potatoes and cut into wedges or bite-sized pieces. Roughly dice the onions, crush the garlic cloves and finely chop them. Wash the organic lemon under hot water, finely grate some zest, and squeeze out all the juice.

Searing & Braising

Heat 2 tbsp olive oil in a large ovenproof Dutch oven. Sear the meat in batches until browned all over, then briefly remove.

Chef's tip

Traditionally, the dish is served with fresh white bread or crusty bread to mop up every bit of the wonderfully lemony, savory sauce.

For even more flavor, you can add 1-2 sprigs of fresh thyme during braising in the oven or crumble some feta cheese over the top at the end.
