Preheat the oven to 160 °C top/bottom heat.

Generously salt the meat on all sides and tie it with kitchen twine to help it keep its shape during cooking.

Clean the fennel and quarter it lengthwise. Finely grate the zest from the washed orange (only the orange part). Then peel the orange and divide it into segments. Slice the garlic thinly.
