
Christmas Baked Ham with Maple-Orange Glaze

- 900 g smoked pork loin or rolled ham (whole)
- 100 ml pineapple juice 100% (or orange juice)
- 1 fresh orange
- 3 tbsp organic maple syrup
- 1 tsp organic ground ginger
- 1 tsp ground star anise
- 1 handful whole organic cloves
Preheat the oven to 170 degrees top/bottom heat. Score the rind of the ham crosswise about half a centimeter deep to create a diamond pattern. Stick a whole clove into each diamond.
Slice one half of the orange, and squeeze the other half. Mix the orange juice with the pineapple juice (or additional orange juice), maple syrup, ground ginger, and star anise to form a marinade. (If using whole star anise, finely grind them in a mortar).
Line a baking dish with baking paper and arrange the orange slices in it. Place the ham on top of the oranges and pour the prepared marinade over it. Bake the ham for approx. 1 hour in the oven, basting it with the marinade from the dish every 15 minutes.
Chef's tip
Crispy roasted potatoes or a freshly baked baguette are excellent side dishes. The ham also tastes wonderful sliced cold the next day.
