Cutting & marinating the meat
Cut the pork neck into cubes of about 3–4 cm and place them in a bowl.
Peel and finely chop the garlic cloves. Finely grate the zest of the organic lemon, then halve the lemon and squeeze out the juice.
In a bowl, thoroughly whisk together the olive oil, lemon juice, lemon zest, garlic, mustard, dried oregano, sweet paprika powder, salt, and freshly ground pepper. Pour the marinade over the meat cubes, massage in well, and leave covered in the refrigerator to marinate for at least 2 hours (preferably overnight).
Chef's tip
Thanks to its fine marbling of fat, pork neck is ideal for kontosouvli, as the meat remains wonderfully juicy and tender even at high heat in the oven.
For an authentic smoky flavor, you can add 1/2 tsp of smoked paprika to the marinade or grill the skewers directly over charcoal during the summer months.
