Preheat the oven to 180 °C top/bottom heat. Carefully slice the pork tenderloin lengthwise (butterfly cut), unfold it, and pound it evenly flat between sheets of cling film using a meat tenderiser or a heavy skillet. Season the meat on both sides with 1 pinch of fine salt and 1 pinch of ground black pepper each.

Finely chop the garlic. Wash the leaf spinach and pat it dry. Cut the sun-dried tomatoes into thin strips and roughly crumble the feta with your hands.

Filling & rolling

Sprinkle the flattened meat with the chopped garlic and 1 tsp of dried oregano. Then distribute the spinach leaves, sun-dried tomato strips, and crumbled feta evenly over the pork tenderloin, leaving a narrow border around the edges.

Chef's tip

This pairs wonderfully with crispy rosemary potatoes from the oven or a fresh Greek salad.

If you prefer not to use white wine, you can alternatively deglaze the pan with 125 ml of beef stock or a robust vegetable broth.
