Preparation method
Preparation
Cut the pork neck into approx. 3 cm cubes and season with 1 tsp fine salt and 1 tsp ground black pepper. Peel the onions and cut into fine strips. Peel and finely chop the fresh garlic. Wash, seed, and cut the red and yellow bell peppers into bite-sized pieces.
Cooking & Braising
Heat 2 tbsp extra virgin olive oil in a large Dutch oven. Sear the meat cubes over high heat for 5–7 minutes until well browned on all sides. Remove the meat and briefly set aside.
Heat the remaining olive oil in the same pot. Add the onion strips and bell pepper pieces and sauté over medium heat for about 8–10 minutes until softened and lightly browned. Stir in the chopped garlic and 1 tbsp sweet paprika powder and sauté briefly for about 1 minute (do not allow to burn).
Chef's tip
For a subtle smoky flavor, you can briefly roast the bell pepper pieces in the oven or on the grill before braising.
Mućkalica tastes even better reheated the next day, as the flavors develop perfectly overnight.
