Pat the pork tenderloin dry and cut into bite-sized pieces, about 2 to 3 cm in size. Peel the red onions and cut into wedges. Wash, seed, and slice the red bell peppers into strips. Finely chop the fresh garlic. Cut the feta into coarse cubes or crumble it with your fingers. Wash and finely chop the fresh parsley.
Cooking in the pan
Heat the extra virgin olive oil in a large, heavy pan (or casserole dish) over high heat. Sear the cut pork in batches until golden brown all over (approx. 3-4 minutes). Season with a little salt and freshly ground black pepper, remove, and briefly set aside on a plate.
Sauté the onion wedges and bell pepper strips in the same pan over medium heat for about 4-5 minutes until the vegetables soften and show slight browning. Add the chopped garlic, dried oregano, sweet paprika powder, and a pinch of chili flakes, roasting while stirring for 1 minute.
Chef's tip
If you prefer traditional Greek style, serve with warm flatbread or kritharaki (Greek pasta) and a glass of chilled white wine.
For an extra spicy touch, a fresh chili pepper or hot pepper can also be braised along if desired.
