Ingredients

  • 1 kg pork neck, whole piece
  • 1 tbsp vegetable oil
  • 10 g salt
  • 1 tbsp coarsely ground pepper
  • Pickles to taste
  • 1 red onion
  • Mustard to taste
  • Burger buns or Kaiser rolls

Method

    Preheat the oven to 100 °C.

    Rub the meat on all sides with oil, season with salt and pepper. Place in a roasting pan, add water up to a height of 1.5 cm, and cover thoroughly with aluminum foil.

    Place in the preheated oven for 10 hours. Afterwards, remove the aluminum foil, baste the meat with the pan juices, and return to the oven for another 4 hours.

    Remove from the oven and let it cool partially in the pan until it is just warm. Then, shred the meat into small pieces directly in the pan with two forks. Mix thoroughly with the pan juices and transfer to a bowl.

    Slice the pickles diagonally and cut the red onion into fine wedges.

    Cut open the buns (burger buns or Kaiser rolls), spread with mustard, and top with the pulled meat, pickles, and onions.

    Tip: Burger buns or classic Kaiser rolls are excellent choices for the bread. Briefly toast the cut sides of the buns in a dry pan before filling. Choose mustard according to your personal taste.
