Dak Gomtang ist eine traditionelle koreanische Hühnersuppe, die von innen wärmt: zart gegartes Hendlfleisch, sanft mariniert mit Sesamöl und Knoblauch, serviert in einer aromatischen, klaren Brühe mit Glasnudeln und knackigen Jungzwiebeln.
Preparation method
Prepare broth & simmer chicken
Bring the chicken broth to a boil in a large pot. Lightly crush the garlic cloves, cut the peeled ginger into thin slices, and add both along with the chicken breast to the boiling broth.
Reduce the heat and gently simmer the chicken for about 20 minutes until cooked through. Regularly skim off any foam that forms using a ladle so that the broth stays wonderfully clear.
Shred meat & marinate
Remove the cooked chicken from the hot broth, allow to cool briefly, and shred into bite-sized, thin strips using two forks.
Chef's tip
If you prefer it spicier, serve with some freshly chopped chili pepper or provide Korean chili flakes (Gochugaru) for seasoning.
Broth and marinated chicken are ideal for meal prep – just stir in the glass noodles fresh right before serving.
